Kuzhipaniyaram – a saga
Introduction:
One of the most adorable and mouthwatering dishes called Kuzhi paniyaram or paddu is famous. It can be sweet or spicy depending on the batter that we use. There is a mould into which the batter is poured, to get out a perfectly round shape. This is something super tasty. The other cutest name is the mini doughnut.
This is also one of the famous Chettinad Cuisines’ wide repertoire of vegetarian delicacies.
A paniyarakkal is essential to the preparation of these rice batter balls. You can opt for the classic cast iron pan or check out the modern copper or non-stick aluminum ones.

Preparation:
- Firstly, Wash and soak 1 cup raw rice, 1 cup idli rice, 1/2 cup urad dal, and 1 tsp fenugreek seeds for four hours
- Secondly, Grind until they turn smooth and fluffy using water as needed, the battery needs to be thick
- Thirdly, Coarsely grind 2 green chilies and some curry leaves
- Fourthly, Add salt to the batter, whisk well and let it ferment overnight
- Fifthly, In a pan add 1/2 tbsp sesame oil, 1/2 tbsp mustard seeds, 1 tsp chana dal, and 1 tsp urad dal
- Sixthly, Once the mustard splutters, add 2 finely chopped onions and some salt. Cook till it is translucent
- Seventhly, Take 2 cups of the fermented batter and add the chili paste and onions
- Eighthly, Heat the paniyarakkal and spoon in a little oil in all the Moulds
- Ninthly, Pour the batter and let it cook. Once done, flip it
- Tenthly, Cover and cook again for a minute till crispy and golden brown
- Lastly, Serve hot with coconut chutney, tomato chutney, and sambar.
