Where did this iconic street food emerge from? It was first made and eaten (or rather, gulped) in Magadha, which is present day South Bihar. The snack is known as ‘phoolki’ in Bihar.
The Snack With Many Names, Pani Puri is also known as Gol Gappa, Puchka, Falk, Pakodi, Gup Chup, Paani Ke Patashe! The name differs in different parts of the country but the love for the food remains the same.

Now onto some gross facts, that may put you off the snack for a while…until you’re reigned in by its addictive allure again. According to a sting operation conducted in Pune, the water used by the pani puri vendors was collected from a local public toilet. Eat at your own risk, folks!
According to mythology, it was invented by Draupadi. Married to the five Pandava brothers and central to the events of the Mahabharata, Draupadi apparently made Pani Puri when her mother-in law Kunti challenged her to make a dish from leftovers. Well, who knew that daughter-in law and mother in law feuds could be so gloriously productive!
The snack isn’t made in an identical manner throughout India! Phulka, the version found in West Bengal, is tangy rather than sweet and the filling is a mixture of mashed potatoes and boiled gram. The more you know!
